Why It Works

At just 0.21%, tara gum provides primary thickening. Stable at pH 3.5 (within 3–11 range). 175-mesh ensures rapid hydration and smooth texture.

Pseudoplastic Advantage

Flows when bottle is squeezed (high shear) but stays thick when applied to food (low shear) — the exact consumer experience expected from ketchup.

Cost Efficiency
