Key Properties

Spray-dried tara gum: particle size D50 = 3.46 μm, spherical shape, smooth surface. Glass transition temp: 141.69°C (comparable to maltodextrin 155°C, gum arabic 140°C). Low moisture (8.63%), water activity (0.37), hygroscopicity — good storage stability.

Best Drying Method

Among spray drying, forced convection, and vacuum drying, spray-dried tara gum showed best physicochemical characteristics: higher lightness, smallest particles, superior thermal properties.

Future Applications

Promising for encapsulating vitamins, probiotics, flavors, and pharmaceuticals. Research recommends continued investigation into practical food and pharma applications.
