Guar: 2:1 (34% Galactose)

Highest substitution → excellent cold solubility, limited synergistic gel formation, tendency toward gummy texture.

Tara: 3:1 (25% Galactose)

Intermediate → good cold solubility (60% at 25°C) + strong synergy with carrageenan/xanthan/agar. The 'goldilocks' position — most versatile.

LBG: 4:1 (20% Galactose)

Lowest → strong chain interactions for excellent synergistic gelling but poor cold solubility. Requires 80°C+ for hydration.

Selection Guide

Need cold solubility + synergy? → Tara. Maximum cold viscosity without synergy? → Guar. Maximum synergistic gelling at expense of cold solubility? → LBG. In many cases, tara gum's intermediate position is optimal.
